P2/P3 Avocado Salsa

This was a very simple salsa to make and yes its P2 safe too.  The avocado is a low gi food, healthy fat, South Beach, Atkins, and even eat clean approved etc and in moderation can also work when you are in P2.


In a blender combine:



  • 6-8 medium tomatillo peeled and washed
  • 4-5 medium cloves of garlic peeled
  • 1 whole avocoado
  • juice of 1 lime
  • 1/2 tsp salt or more depending on taste
  • 1/2 cup fresh cilantro leaves
Blend together then add chopped white onion at the end for a little more taste and texture.  Salt to taste
