This was a very simple salsa to make and yes its P2 safe too. The avocado is a low gi food, healthy fat, South Beach, Atkins, and even eat clean approved etc and in moderation can also work when you are in P2.
In a blender combine:
- 6-8 medium tomatillo peeled and washed
- 4-5 medium cloves of garlic peeled
- 1 whole avocoado
- juice of 1 lime
- 1/2 tsp salt or more depending on taste
- 1/2 cup fresh cilantro leaves
